Our bison are 100% grass fed on the majestic Diamond Mountain Ranch, located in Greenville, CA

Gold Coast Bison believes in sustainable ranching and have established a close working relationship on Diamond Mountain Ranch owned by Jeff and Cindy Miller. Their ranching technique follows careful grazing practices that actually improve their land over time. The Millers are mentoring Gold Coast Bison on their sustainable ranching practices to help us reach our dream to own a sustainable ranch and continue the growth of our herd.

Bison Blue Cheese Burger

July is National Bison Month – so fire up the grill and indulge in chef Kathy Cary’s Bison Blue Cheese Burgers.

1 1/2 lbs. ground bison
2 Tbs. good quality Dijon mustard
2 Tbs. roasted & chopped shallots & garlic
2 red onions sliced
balsamic vinegar
2 bulbs fennel sliced
1 tsp.  Lea & Perrins Worcestershire sauce
splash  of  extra virgin olive oil
kosher salt & fresh ground black pepper to taste
good quality blue cheese or Roquefort

Combine all ingredients and form 6 patties adding approximately 1 teaspoon of blue cheese into the center of each patty.   Grill to order. Serve with rosemary roasted potatoes and homemade coleslaw.  Serves 6

Garnish
2 sliced red onions drizzled with extra virgin olive oil & balsamic vinegar.  Grill until tender.
2 bulbs of fennel, sliced & sautéed until tender.

Toss the onions & fennel together and place on bison burger.
